Two-tone fish and Japanese salad
Two tone cutlets:
- a salmon cutlet
- a mackerel cutlet
- 2 tsps honey
- a dessert spoon of soy
- a teaspoon or so of sesame oil
- 3 cloves of garlic, crushed
Combine the honey, soy, miso, oil and garlic, rub into the fish and let it marinate while you take care of the rest.
Japanese salad:
Japanese salad:
- A red oak lettuce
- a carrot
- a cucumber
- a tomato or two
- half an apple
Dressing:
- two tablespoons of soy
- a tbsn mirin
- a teaspoon of sesame oil
- two cloves crushed garlic
- a pinch of white sugar (these are all very "or so" quantities. Taste it. Make sure it's a) not too salty, and b) you have enough vinegar)
Slice, dice, julienne and smack the salad ingredients upside o' the head. Arrange them on top of the lettuce.
Mix together the dressing ingredients and then drizzle on top.
That's the salad done. Now, put the cutlets under the grill (on high) and cook em, basting with any leftover sauce.
It should take around, if not less than ten minutes. I had originally planned on cutting the cutlets post-cooking exactly in half, so it would truly look like one, two-toned cutlet, but I'm sorry to say my hunger got the better of me. A heh.
That's the gist, though. A delicious, and very healthy (albeit slightly salty - sorry Jangers!) meal.

It was very yummy! Although, there is still a fishy smell in the kitchen today (guess this is my fault since I was in charge of clean up lol)
Yeah it was good. I'm a big fan of Japanase ingredients in salad dressing - wakame goes a treat, too.

I don't know if you eat beef but last night I was stirfrying beef
which I had started off in sesame oil, mustard seeds, cumin seeds, onion/ginger/garlic. Had just shaken in some oyster sauce and soy sauce, then...
and grabbed my fish sauce with has a tiny hole and the top so you have to really shake it to get it out - only it wasn't fish sauce it was a bottle of Thai vinegar, with an open mouth! So i sploshed in at least half a cup. Then I thought, "Oh no.. i've ruined it... rescue mission!" and sprinkled in some sugar and crossed my fingers. And you know what? It was beautiful.
That sounds great! What kind of mustard seeds did you use? Black or yellow?
